Fermented Almond

  • 4 cups almonds

  • 1 bulb garlic

  • 1 Tbspn ground coriander

  • 1 1/2 tbspn cumin

  • Juice of two lemons

  • 1 tspn honey

  • Culture starter

  • Vegetable starter


  • Rinse and soak the almonds over night
  • Prepare culture starter in 1 cup of warm water, one sachet of vegetable starter and honey
  • Drain and rinse nuts after soaking
  • Add to food processor with other ingredients
  • Blend adding enough filtered water to make a stiff puree
  • Place into a glass jar and pour over the prepared culture starter
  • Wrap in a towel and let ferment for 18-24 hours


  • Add to flaxseed or other crackers to make a quick wholesome protein snack
  • Add to cheese platter
  • Add to salsa and crackers
  • Top with avocado and put on crackers with coriander and salt for a double protein and good fat hit
